Keto assorted chocolates – Christmas special

Keto assorted chocolates are a fun way to treat yourself and your beloved, this Christmas.
Give them this quick and easy to make keto chocolates and let them enjoy this festive season to the fullest.

KETO CHOCOLATE TRUFFLES

Ingredients

Makes 6 pieces

4 oz or 1/2 cup 85%-95% dark chocolate (melted)
4 oz or 1/2 cup heavy cream
3 tbsp butter
1 tsp vanilla extract
8 tsp stevia or as needed
Cocoa/coffee powder for coating

METHOD

  1. Microwave the heavy cream for a minute. Now add the melted dark chocolate and mix well.
  2. Melt butter. To it, add dark chocolate mixture and mix thoroughly. Now add stevia and vanilla extract.
  3. Pour the batter in round moulds and let it set.
  4. Once set, demould and heat the flat side of two pieces little bit on a hot pan and join that two to make one round truffle and place it on a plate or in the mould and set it.
  5. Once set, coat with cocoa powder.

Note : You can melt dark chocolate either in microwave or double boiler.

KETO ZEBRA POPS

Ingredients

Makes 6 pieces

1 1/2 tbsp coconut cream
1 tbsp clarified butter
6 tsp stevia or as needed
1 1/2 tbsp coconut oil
2 tbsp 85 – 95% dark chocolate (melted)
1 1/2 tbsp heavy cream
1 tbsp butter (melted)

METHOD

  1. White batter – Mix clarified butter, coconut cream and coconut oil.
  2. Brown batter – Mix melted butter and heavy cream. Add stevia to this and then add this to melted dark chocolate.
  3. Drizzle the batters alternatively (with a fork) in square moulds, to form the zebra pattern. Let it set.

KETO FERRERO ROCHER

Ingredients

Makes 6 pieces

2 tbsp coarsely crushed pecans, hazelnuts and Brazil nuts
1 tbsp almond butter
1/2 cup dark chocolate (85-95%)
1/4 cup heavy cream
4 stevia sachets or as needed

METHOD

  1. Layer 1 – Take half of the dark chocolate and melt it slightly to get a consistency where you can roll it into pea sized balls. Once done, let it set. (Add a sachet of stevia after melting and then roll)
  2. Layer 2 – Finely coat the almond butter to the pea sized balls or simply dip it in with the help of toothpick in the butter and let it set.
  3. Layer 3 – Mix heavy cream, 3 stevia sachets and remaining dark chocolate to a creamy consistency.
  4. Add all crushed nuts and thickly coat the chocolate balls with it. Let it set and your awesome ferrero rochers are ready to dig in!

Tip – Make sure the melted chocolate is cool when dipping the balls in the final layer, otherwise might melt the butter.

KETO PEANUT-CINNAMON HEARTS

Ingredients

Makes 6 pieces

2 tbsp peanut butter
1 tsp cinnamon
1/3 cup melted dark chocolate (85-95%)

1/2 cup heavy cream
4 stevia sachets

METHOD

  1. Mix the peanut butter, 1 stevia sachet and cinnamon. Pour a thin layer of the batter into heart shaped mould. Let it finely set.
  2. Mix dark chocolate (cooled down), heavy cream  and 3 stevia. Now pour half in the mould then place cinnamon heart and pour the remaining and let it set.

Tip – You can cut the cinnamon heart with a cookie cutter to make it smaller so that chocolate fully coats it.
You can add two cinnamon hearts and three layers of chocolate alternatively for enhanced flavour.

  1. What kind of Stevia is used for these? Just the regular powdered kind? Seems like a lot, so just wanted to double check 😊
