1.Cream of spinach soup

Ingredients

Serves 2

8 oz spinach leaves
1 cup heavy cream
4 tbsp butter
1/2 small size onion finely chopped
1/4 cup cream cheese
1/4 cup coconut milk
1 tsp black pepper
Himalayan salt to taste

METHOD

  1. Blanch the spinach and make it into a fine puree.
  2. In a heated pan, add butter and saute onions.
  3. Once transparent, add spinach puree and let it cook for few minutes.
  4. Now add heavy cream, coconut milk, cream cheese and bring to a fine boil.
  5. Add salt and pepper and garnish with some more cream before serving hot.

2.Broccoli cheddar soup

Ingredients

Serves 2

1 cup broccoli florets
1/2 cup heavy cream
3/4 cup cheddar cheese (shredded)
5 tbsp butter
A pinch of clove & garlic powder

METHOD

  1. Blanch the broccoli florets till tender.
  2. In a heated pan, add butter, heavy cream and mix well on simmer.
  3. Now, add the cheese gradually and constantly stirring until it all melts on low simmer.
  4. Once cheese melts, add broccoli and spices.
  5. Garnish with some heavy cream and serve immediately.

3.Hungarian mushroom soup

Ingredients

Serves 2

4 oz or 1/2 cup chopped mushroom
1 stalk of celery chopped
5 tbsp butter
12 oz or 1 1/2 cup heavy cream
1/2 cup coconut milk
3 tbsp cream cheese (softened)
1/4 tsp onion powder
1/4 tsp garlic powder
Himalayan salt to taste
1/2 tsp black pepper
1-2 tsp Hungarian hot/smoked paprika(Adjust as per spice preference)

METHOD

  1. In a heated pan, to butter add chopped celery and mushrooms and let it cook till tender.
  2. Once done, add coconut milk and all spices and bring to a boil
  3. Now add heavy cream and cream cheese. Mix constantly on low simmer.
  4. Garnish with heavy cream and serve hot.
